Pre-heat oven to 375 degrees.
Set out baking sheet and cover with parchment paper.
Using 12 Figs - cut stem off and quarter the fig 1/4 to 1/2 way down, spreading the fig open slightly.
Stuff each fig with about a half teaspoon of goat cheese.
Wrap each fig with Prosciutto at the base.
Place figs onto baking sheet.
Bake for about 20 minutes, watching for prosciutto to caramelize and not burn, making sure the goat cheese is melted.
Optional - drizzle each fig lightly with balsamic glaze.
